Wild Rose Water & Cardamom Biscuits

I was driving to my Dad’s house early the other morning when I noticed that the wild rose bush in his front garden is in full bloom and it made me think that I must make some rose water (for cosmetic and culinary purposes) while they’re still in bloom!

I went out mid morning and harvested a bowlful of the pale pink petals, still sprinkled with dewdrops and admired the buds and hips peeking out from the green mass of leaves and stems. I placed some petals in a paper bag to dry in the sun and waited until the next day to bake these Persian-inspired biscuits.

To make the rose water I just gently steamed 2 cups of rose petals in a small pot with 2 cups of water. Keep the heat low and cover, steam for 20 minutes. Strain petals out and allow rose water to cool before using!

These spicy, sweet shortbread-like biscuits are so simple and beautiful, perfect for a fairy tea party or a countryside picnic. Enjoy my fellow foragers!

Wild Rose Water & Cardamom Biscuits

Ingredients:

1 cup homemade vegan butter

1 cup coconut sugar

1/2 teaspoon vanilla extract

2 tablespoons homemade rose water

2 1/2 cups flour

1 teaspoon cardamom

Pinch of salt

1 block vegan white chocolate, melted

1/2 cup pistachios, chopped

2 tablespoons rose petals, dried

Directions:

  1. In a large mixing bowl cream together the butter and sugar. Add the vanilla essence and rosewater.
  2. Stir in the flour, cardamom, and salt. Add more flour if needed until it forms a crumbly dough. Cover with a tea towel and place in the fridge for 1-2 hours.
  3. Preheat the oven to 170 degrees fan bake. Place the dough between two sheets of baking paper and roll out with a rolling pin until about half a centimetre thick. Cut into whatever shapes you like and place on a lined baking tray.
  4. Bake biscuits for 15-20 minutes or until slightly golden around the edges. Allow to cool.
  5. Dip half of your biscuit into melted white chocolate and sprinkle with chopped pistachios and dried rose petals. I would recommend sharing these biscuits on a picnic in the countryside with someone you love!
